Aloo Gobi(cauliflower and potato)

Ingredients

1 medium size cauliflower( cut in medium sized florets)
2-3 medium size potatoes diced
1 onion diced
1/2 inch ginger 4-5 garlic cloves
2 green chillies and a lit bit green coriander
1 tomato diced
1 tspn salt and 1/4 tspn turmeric
1/2 tspn dry coriander powder
a pinch of red chilly powder
1 tspn cumin seeds
2 -3 tblspn oil

Instructions

blanch the cauliflower florets 4-5 mins
heat oil and crackle the cumin seeds
add onion and saute for 2-3 mins
add the grinded paste of ginger, garlic, green chillies and coriander leaves
and stir fry for 2-3 mins
add the potatoes and fry for 2-3 mins
add the turmeric, coriander powder and salt stir fry 2 mins
add the cauliflower and cover with a lid let it simmer on low flame
after 2 mins add the chilly powder and stir for a minute
finally add tomatoes(place them under the veggie so they get soft faster)
simmer for 2 mins and then cook on high flame for a minute.
delicious veggie is ready( you can also add some peas to it for variety, add them along the cauliflower)
garnish with green chillies and cilantro
